Green pancakes. Oat, Banana & Spinach
Ingredients: Yields: 12 pancakes.
1 C of Oats
1 C of Spinach
2/3 C milk or almond milk
1 Egg
1 Banana
1 tsp Baking Soda
1/2 tsp Vanilla
1/2 tsp Cinnamon
Thin with milk as needed
Directions:
Add the oats to a high-speed blender or food processor and blend until broken down into a flour-like
Add the milk, spinach, banana, cinnamon, egg, and vanilla and blend until the batter is smooth.
Rest the batter for 10minutes. Pour the pancake batter with a ladle and slightly brown on both sides.
Heat a nonstick pan and add butter/oil to it. Serve with a side of nut butter or fresh fruits.
