Authentic Salsa “Caliente” (or Not)

Jalapenos are rich in vitamins A and C and potassium. They also have carotene — an antioxidant that may help fight damage to your cells and folate, vitamin K, and B vitamins. Many of their health benefits come from capsaicin.

Ingredients

1-5 JALAPEÑO’S, DEPENDING ON THE SPICE LEVEL YOU DESIRE. 

BOIL JALAPEÑO’S IN WATER (5-10 MIN), REMOVE & CUT OFF STEMS. REMOVE SEEDS AND SLICE. (TIP: WEAR GLOVES. MOST OF THE HEAT IS IN THE SEEDS. AVOID TOUCHING ANYTHING, ESPECIALLY EYES, WHICH CAN CAUSE BURNING THAT CAN LAST SEVERAL HOURS)

WHITE ONION CHOPPED INTO LARGE CHUNKS, 

1 BUNCH OF CILANTRO FINELY CHOPPED

I CAN OF DICED TOMATOES (PREFERABLY MEXICAN STYLE)

2 MINCED GARLIC CLOVES OR 3/4 TABLESPOON OF MINCED / CRUSHED GARLIC

2 TSP SALT

2 TSP BLACK PEPPER

2 PINCHES OF MENUDO MIX- Simple Menudo Mix

2 parts oregano

2 parts onion flakes

1 part coriander seed

1 part ground cumin

1 part chili flakes

Directions

EMPTY CAN OF TOMATOES  and 1⁄2 CAN OF WATER INTO BLENDER.

ADD SALT, PEPPER, MENUDO MIX, ONIONS, GARLIC,  CILANTRO, AND JALAPEÑO’S.

BLEND.

POUR INTO A SERVING BOWL.
